Ireland has some of the most incredible natural produce in the world. Furthermore the numbers of artisan food producers on our shores is growing at a phenomenal rate. This happy “marriage” allows our chefs the opportunity to source some of the best ingredients to be found anywhere in the world.
Since opening The Merchant Hotel, the quest to search out the very best producers has never ceased. Quality and provenance are paramount. We work with the best across Ireland and some from further afield. We currently work with 16 very carefully selected local suppliers and are always on the search for more. Our annual chefs food tour brings our senior kitchen teams out of the kitchens and into the field – often literally! This important research allows our chefs to meet the suppliers we currently work with as well as seeking out new and exciting products.
Sustainability, organic farming and an excellent record in the care of livestock are always key considerations when selecting a new supplier to work with.
